Trackings contact responses to campaigns

I would like to know the best way to achieve this - 30 minutes searching knoewldge bases hasn't come up with anything so I am asking.  I probably don't need too much details - just a broad suggestions for how to accomplish it.

I am using Zoho to track my dealings with internal customers at a large institution (University) and my role involves stimulating and supporting external applications for funding. From 2000 leads (all staf) I have about 200 contacts (those I interact with).

I will run a large event to stimulate interest in applying to which I will invite say 100 of those 200. I think of this as a campaign. After the meeting I will engage in a range of follow up activities from group emails depending on their contact profile, to individual emails or phone calls.  I wish to categorise those 100 so I can track the progress of my intiative. Attributes may be 'interested', 'not interested', 'in process of applying', 'applied' etc.  Perhaps 20 diffetent attributes.

What is the best way to achieve this in Zoho CRM? What I think I want is to add some kind of status (where I can define the statuses) for each contact/lead in relation to a particular campaign or project.

I will then run another large event which might have a different set of statuses.
