Impossible to find help to "use layouts for Editing an account"...

Layouts seems to be used for a lot of things, views also, but not to show only the usefull field to be modified for a specific action or population of users.

The only "trick" I found was to use the "datasheet view" after creating a specific filter that use the layout I created. but difficult to use (as I cannot show only the account to edit, and also multiple pick items are hard to handle in this view… )

I took a look at webforms but it only allow to add contacts, not to update existing contacts or accounts…

Need - USER STORY: 
I have some users of let say "Customer support" department, and they receive very usefull details about our customers companies (Accounts) that we would like to allow them to modify. 

So, I created specif layout for them, associated to their profile as default layout (so now if they add a new Customer they can select the layout… but its not useful), but no way, each time they edit details about an account they fall on the Standard, default layout, and have to search for the field.
