user signature is not part of the choices in the email templ

Signatures are personal and should be included in outgoing emails but there is no field in the available merge field specifically calling for the user signature...

Please include this in future releases so as to minimize confusion about whether or not to manually add to the email templates:
${User.First Name} ${User.Last Name}
etc.

What is really really needed is a preview of the email with ALL of the merge field data loaded to verify contents are accurate.
