What do people do with contact information for customers who are no longer at their companies?

What do people do with contact information for customers who are no longer at their companies?

I have many accounts/customers who have had frequent turnover and the email/contact information is old and out of date. Do people delete old contacts or are they saved/turned off elsewhere so the old emails can be viewed?
