Why cant't I use custom picklists fields in Email templates?

Why cant't I use custom picklists fields in Email templates?

Subject speaks for itself. I have an email template that is sent out to various people when we have a new potential asking for a quote. I want to include a number of fields in this email, some are text, some integer and some picklists. Is this possible?
