Wordprocessing document - versions and changes

It seems that a new 'version' is created every minute or so that I am editing a document. When I view 'diff' for any of these versions, it then shows me only the changes mage since the last time the system created a new saved version. How do I see all changes made to the document from the beginning of my editing - not just from the last auto-version?

I would lie to be able to assign a document to someone and then be able to see all of the changes they make to the document when finished . . . not from one intermittent version to another.

Please advise.
