Zoho Deal Structure for a certain business type

Hello there,
I have a client in an industry that isn't quite good in terms of payment ethics.

His process starts by signing the customer on a service agreement with a deal amount the varies in terms of paymetns,
for example, could be a 10,000$ deal, that will be paid in 13 unequal payments, in non- defined dates. that can take about 3 years to fully collect.

I have attached a diagram of the possible cases and I'm looking for an advice for how to build the deal stages in a way it will reflect properly in our reports. In different cases Im not sure if a deal is lost or considered as closed won.
