Why are the emails collected from the Pop-Up not reflected on the Contacts tab?

Why are the emails collected from the Pop-Up not reflected on the Contacts tab?

The email response from the Pop-up will reflect on the Contacts tab only if the email field on the Pop-Up is mapped to the "Contact Email" field as shown below.
