Can I assign/unassign the roles of participants and if so then how?

You can modify the channel roles for various users. The hierarchy of the roles on channels is as follows:
Super Admin → Admin → Moderator → Member → Bot
Let's have a look at the roles and the privileges associated with it -
  • Super Admin can edit other roles such as Admin, Moderator, and Member. The other roles cannot assign a role to the Super Admin.
  • Admin can edit roles for moderators and members. They can be assigned to the moderator or member roles by the Super Admin.
  • Moderators can remove members. They can be assigned as an admin or member by the Super Admin or Admin.
  • Members cannot assign roles.
  • Bots can only be added or removed by other roles based on the permissions. 
Note :
When a creator wants to leave an external or personal channel, they will be asked to assign another member as the Super Admin.

To assign/ unassign roles in a channel:
  • Click the participants icon in the chat header.
  • A participants info popup will appear. Hover to a user and click the Actions icon(3 dots).
  • Select the Assign as Admin/Moderator/Member option based on the action you want to choose.
