Segmentation - Customizing the Email Campaign Page and also creating click reports based on segmentation

Please see attachment of my screenshot.  Is it possible to customize this onscreen look based on our own segmentation?  We want to add our most import columns of segments rather than show "phone".

Can we create email open/click reports based on criteria we are going to enter through a segmented email list?  This is important as some days our newsletter is more important to one segment than the other and we want to start to track this.
