Additional fields for items?

Is there any way to add additional text fields to an item?

For example, several of my clients need not just a description of the individual item, but also the date on which services were rendered and a field to identify the person who scheduled the service. 

It would be great to have the option of adding other fields besides quantity and taxes, specifically, text-based ones that don't need to be calculated.
