Custom Statuses - Can You Do Anything With Them?

As far as I can tell, one really cannot do much with custom statuses.

I created a new custom status for sales orders called "Customizing / Hold". This is for sales orders that have the Confirmed status.

The use case here is that, as an e-commerce company, we have a stream of confirmed sales orders being entered into the system automatically from different platforms and marketplaces (our website, Amazon, etc.).

There are regular occasions where these sales orders cannot be immediately fulfilled, commonly when there is some customization that needs to take place. The custom status of "Customizing / Hold" was added for these sales orders with the intent of them being set aside and treated differently.

However, I'm not seeing what I can do with this custom status.

I can't filter views, as the custom status doesn't show up. I also can't trigger workflows.

I want to do things like remove sales orders with this status from the "To Be Packed" list. I was thinking of workarounds that I could do with workflows, but there's no trigger. I'm stymied as to how to address this.
