Items attribute questions

Many of my items have attributes, such as size and color. How can I add new fields to the "New Items" screen to capture that in my Purchase Orders, Items, and Sales Order pages? I only see these attribute fields when adding an Item Group.

Also, on the "Edit Item Group" page, I can only add more colors or sizes to a group one combination at a time. Is there a way to work around this?

I don't want an item in a group to have their attributes listed in the item name.
For example, if a shirt comes in blue and red, I want the item name to be "Shirt" and then the color to be listed as an attribute.
