How do I answer this question in analytics?

What is the Closed-Won percentage of all Deals that reach a given stage?

Another way:

Of all Deals that reach a given stage (eg. Artwork/Price Quote), what percentage of them become Closed-Won?

I want to populate the Deal Stage probability with our actual date using a rolling 12-month period.

The Analytics default "Pipeline" funnel is showing something other than the answer to my question because any number of the displayed "funnel stages" exceed 100%. 

The output I need from analytics is a simple pivot like this:
