Quantity Allocation on order

Hi,

Is there any way to allocate or deallocate quantities on orders.

For example, if I have a booking model, I do not want certain quantities/items to be engaged on an order for a certain time lapse. I want to keep them available for sale on another sales channel before processing my booking order for these items/quantites.
