newbie questions Zoho books

I am interested in using Zoho for my translation business and have a couple questions. First, I charge different rates for the same service (for example translation of German to English) depending on the complexity, topic, etc. Can I set up one article (called Translation DE=EN for example), give it a default price value, and then change that value on an invoice by invoice basis, or will that screw things up? If I can't do that, what would be the best way to handle this?
I am also having trouble when I create an invoice from within the Timesheet (projects). The custom fields that I have defined for the invoice template do not show up. When I create the invoice from within the Contacts area then they do show up. I have looked for other places to define this but can't find it, can you direct me?
Basically I am thrilled with the flexibility and language options, you guys rock!
