Basic Newbie Support questions

Hello All,
I am very new to zoho and have some basic questions.

Can I connect a different form to the "back end" tables? I don't see any access to data structure to connect different forms. I would like to create different forms for different people. Some for just inputting data and others for changing or viewing.

Can I create a form in a different view that will allow me to see ALL the records? Right now I have my one form and one report to show all the records but no way to change them. In Microsoft Access they call it a continuous form.

Lastly...What is the best reading for Zoho?
