How to add additional info to a field/fields in CRM without replacing the existing entry?

Hi, I'm sure this is a basic question  but I could not find the answer in the resources 

We run different competitions and the same person could enter multiple competitions, how do I track/update which completion they have entered? 

for example, if I create a field that says "competition name" and a person has entered competition 1, what happens when they enter competition 2. will that field get updated (competition 1 replaced by competition 2 ), how do I keep a record of both entries ?
