Delivery Method Field in Sales Order Module

Delivery Method Field in Sales Order Module

In Books and in Sales orders, the "Delivery Method" field seems to allow for anything to be entered and it seems to store those entries for future use. 

When you chose to convert a sales order to a purchase order, the related field is now called "Shipment Preference" , the chosen method doesn't carry forward but the same drop down list of previous entries is available. 

1. should this field carry forward from SO to PO?
2. Where are the entries into this field stored for edit?
