Tracking Work Order Delivery Times in Zoho CRM

I recently created a work order in Zoho CRM with an estimated delivery time. Since the work order progresses through various stages, I'd like to track the actual delivery time and compare it to the estimate. This would help identify any delays and allow us to take corrective actions.

I've looked into automation flows, but I'm unsure how to compare the actual and estimated delivery times. Does anyone have any ideas on achieving this?
