"Color Coding of picklist values" will help you achieve this requirement partially. Do check out this document and submit the beta request to try it out in your Zoho Desk portal!
Kleurcodering voor keuzelijstwaarden is een specifiek veldtype en is niet van toepassing op het standaardveld 'Status'. Voorlopig kunt u een aangepast veld met dit type maken om de tickets te helpen differentiëren.

Color coding for picklist values is a specific field type and doesn’t apply to the default "Status" field. For now, you can create a custom field with this type to help differentiate the tickets.
Understand that the Status is not currently an option. I agree 100% it should be.
However, you keep referring to Color coding for picklist. How would this help as it is not something, at least that I am aware of, that can be inserted within the summary ticket view (Lets say Classic View for example). Or is it and if so how?
I still vote for Status's being able to be color coded. And while your at it having any update to a ticket will push the ticket to the top of the list.
