Booking system for monthly restaurant reviews

Hi all 

Looking for some help please to create a system whereby users can access a list of available restaurants to review each month.  Once the restaurant is selected, the user "books" their place to review the restaurant that month.  I have a Form prepared which I will need to send the user based on which restaurant they pick. 

Once the user has booked their place, that restaurant then should not be selected again for that month (unless the user cancels). 

Any ideas how I'd go about creating something like this? I've looked at Bookings but that allows for multiple appointments to be booked and it will be too time consuming to block calendars for each restaurant (there may be upwards of 100 restaurants to be reviewed).
