Email personalization

A couple quick questions from a newbie.  So I am testing out the broadcast email capabilities in the system.

I sent a test email to myself with the personalization merge fields included.  You can see below.

My question is, what if someone does not have a first name in our system?  What gets populated in the name location?  Hoe can i verify that this is indeed correct in sending?  Do I have to have a test recipient be a contact prior to test sending?  Thanks!  Email below...
