How do I create a Notes category in each ZOHO Notebook?

How do I create a Notes category in each ZOHO Notebook?

Hi there, I somehow created "Categories" within a ZOHO Notebook. However, I have no idea how I did that. Where can I find a FAQ or HOWTO to group all my Notes in "Categories"?
