New Feature - Education Details and Experience Details - How to best use them?

I just stumbled across the new sections in our Candidate records - Education Details and Experience Details.  This information is now parsed into the record when the resume is uploaded.  Separate fields for everything, including date ranges for length of time in a particular position or when the Candidate received a degree.

I like these new fields, and especially that they are parsed, however, how can we get our older candidate records to refresh and also show these details? 

And, how can we effectively search these fields?  IE - say I want to find a Candidate with a Master's in Civil Engineering with experience working at Bechtel between 2000 and 2017.  I can't seem to find a way to search to that level of detail.  I can only search keywords.

Any suggestions?
