Questions about forwarding mail

My wife and I are on a three-month trip to the south. I'm unable to get mail delivered to our rented property. As a result, I'll transmit it to my son in town. I'd want to ask you a few questions.

I'm not sure how far ahead I should start filling this out. The last time I sent a forward email to my son, it took almost a week to begin after I specified that I wanted it to begin. On the other hand, I don't want it to get too far ahead of schedule.

At our house, we get mail for my recently dead father-in-law (via change of address for him). So, as far as I understand it, I'd have to make two forward mail requests, i'm go, one for us as a family and one for him because his last name is different?
