Leads and Deals for Nonprofits

Are there any nonprofits who are using CRM Leads and Deals to track opportunities that do not start with a person? Example: There is a grant, RFP, or RFI that becomes available. In my organization I would want to start with listing the opportunity and then connect Accounts and Contacts to that opportunity. From there I might create a project that includes the activities that parallel Deal Stages. 
Would adding a Identification or Prospecting category stage prior to the Qualification stage be the best option? And then create a Campaign and or Project? Is there a way to map the Deal stages to tasks in Zoho Projects.
I would appreciate any suggestions or feedback.
