Category to Alert

Hi

I am looking for help on how to solve an issue.

We use the Category field for all items. We also use Composite Items.

We would like to create an email alert when a Sales Order is created, however it would need to look at the Item to identify the category of the Item and if it is Category X, send an email to Support X. If it is Category Y, then email to Support Y etc

It would also need to look at Composite Items and drill down to the component items to also follow the flow above.

Would anyone be able to assist with how we would do this? I understand it would need a custom function but that is not our expertise.
