Better User/customer interface for our business.

Hi, anyone?
So far, how I have set up the system works just about OK and has done so for the last few years, but we are getting some customers who seem to get confused and we agree.
Can anyone guide me how to set up the following scenario or let me know if it is possible to set it up somehow, it would make more sense to those booking for our business?
Here is my Studio set up. (see screen shot attached)
I want the customer to be able to select their preferred DATE and then the TIME, finally once date and time is selected to them to be able to see the Tables that have a start time available within an hour either side of the requested time. IF not are available to go back to change the start time (or the date).
Our business does not rely on any specific staff/people, just the tables being available for either of  the two 30 minute tables or one of the four 60 minutes tables. 
Most of the time,
1) the customers are more specific on the "date" they want to come.
2) which table they have is not relevant to them (or us) except they require to choose either of the 30 mins tables or one of the 60 min tables.
3)  starting Time is usually more flexible for them but they want to easily change the date if the time is not available.

Currently because they have to select the table first, then the date and time, when they go back to change the table because the time they want is not available, the date reverts to today or the next available day for that table, and if they had previously selected a different date in the future, we often get problems and they did not notice the date they selected earlier has changed back? Hence they booked on the wrong day!

I am half expecting that I will not get this sorted, but worth asking either a user who has set up something similar, or just told that's not possible. 

I live in hope of the perfect solution!
